Menu Plan Monday

Hey friends! Ya’ll guess what? It’s not raining today, isn’t that a wonderful change of pace?

I’m glad to see the sunshine albeit chilly but I wasn’t quite prepared for the frosty coating on the cars this morning. I knew the frost was coming but still surprised me and it sharply reminded me that I haven’t put fertilizer on my blackberries yet. UGH, I’ve got to get that done and hopefully it isn’t too late, from what I’ve read it should have been done BEFORE the first frost. We won’t talk about the fact that I’ve only cut back half of the bushes and have yet to tame the new canes.

This looks to be a busy week, but then aren’t they all these days…I’m still working on keeping the grocery budget under $100 a week but I haven’t been to the grocery yet today so fingers crossed I can meet the challenge. I need to come up with a better way to figure in the restaurant portion of the budget and manage it as well, with the swim schedule and the band being what it is the weekends are loaded with “out” for the plan. Speaking of the plan shall we precede to said menu plan?

  • Monday-Pork fried rice, this is the leftover pork from last week I popped the leftovers in the freezer and have it thawing today. I’ll add the pork to a basic fried rice recipe. Its not too complicated, I toss in whatever veggies I have on hand (carrots, edamame, onion, broccoli) saute’ until tender add precooked rice and toss it about with a mix of soy sauce with a couple tablespoons of brown sugar.  One of my favorite things to do is use toasted sesame oil in the cooking, it just adds the extra yumminess.
  • Tuesday-chili
  • Wednesday-leftovers for me and the hubby, church dinner for the kiddos (thank ya Church ladies)
  • Thursday-Round steak with mashed potatoes, gravy and butterbeans
  • Friday-Meatball subs with homemade meatballs and LOTS of CHEESE!
  • Saturday-out and about

Saturday our Mighty Laker band will travel for the state prelims and hopefully finals.(GOOOO Lakers!!!!) We start the day in one city and then travel to another so our food plans will likely cover half the state! Let’s add in the fact that Ash has the ACT that morning in yet ANOTHER town, Hahahaha! These kiddos, the things we do but we wouldn’t have it any other way. ((SMILE))
