Friday Food Followup

Well let us just call this what it is… this is my attempt at redemption after failing to post the plan on Monday. BAH!!! What can you do but try to do better.

 

Trying to plan to meals for the week isn’t an easy task, but I’m preachin’ to the choir here right?!? I want good food for my little family, easy on the waistline for me, filling and energy providing for my young ‘uns, and some variety for you good folks (are you out there? are there folks reading? hello?? am i alone here? hellloooooo????) I digress, but ya hear me right? That’s some super supper time pressure.

I hope ya’ll had a good week, we’ve had a pretty good one ourselves here in the Bluegrass State. Swim practice is in full swing and with the kiddos swimming on 2 teams its a little busy but they still gotta eat. So here’s a recap of dinner this week and how it all shook loose at the Phillips’ house….

  • Monday: Crock pot fiesta chicken and Mexi-rice (this made tons of wonderful leftovers and I’ve enjoyed those twice this week)
  • Tuesday: Pancakes per the request of the cutest little swim guy ever!
  • Wednesday: The sisters had supper at church so the boys and I had ground beef soup and grilled cheese sandwiches (it was cool and supposed to rain so that automatically calls for soup and grilled cheese).
  • Thursday: Make your own pizzas and are ya’ll ready for this I made the dough from scratch and it was way easier than I thought it would be and decidedly yummy! I used this recipe for the dough and let the kiddos add their favorite toppings. Will definitely add to the rotation. It is note worthy that in my haste to taste the crust of this pizza I failed to allow the cheese to cool down from the roughly the same temp as the surface of the sun and now I have a most terribly scalded tongue, no joke it’s bad. ((OUCH))
  • Friday: Pasta fagioli  I love this soup, its from my sweet friend Lois and on dreary days I just love this soup. Its a wonderful blend of vegetables and has noodles, noodles people I love me some noodles!! This soup also makes me think of and miss my friend.
  • Saturday: leftovers
  • Sunday: Momma needs a break so Daddy better be taking us out after church! Ha!

Saturday afternoon should be fun it’s NERF WARS!!! Hahaha! Our friends here in town have an annual get together and FINALLY we can make it, we are usually out of town swimming so Swim Guy is excited to dust off the arsenal and hang out with some his buds. The hubby and I are glad to catch up with our friends too, they are Florida Gator fans and since those are few and far between here in Kentucky we need to stick together. Yes, we are from Georgia but hubby still likes him some Gator football.

I hope ya’ll have a restful weekend and enjoy some time with good friends, make a mess too!
