Menu Planning Monday

Good Monday morning friends!!

We are starting the first week of fall on a rainy note. I’m working on the Monday chores today accompanied by the heroics and antics of Jack Reacher, Die Trying. It’s got great action but good gracious that Reacher fella can get himself into some messes! I’m listening to him but he ain’t a listening to me, I’m trying to tell him who he can trust. (I am going to have to put the action on pause while I type this or this post will read like a transcription of the book.)

At any rate this post is about groceries not daring literary drama. I almost always combine my meal planning with my weekly planner updates. One needs to know how the week is gonna shake out to know how much time one has to put into the kitchen on any given night. I hope ya’ll aren’t looking for culinary greatness this week cause ya’ll will be sorely disappointed if ya are! HeHeee!!

And the menu is….

monday: pizza, like good old take out, cause ya know… Monday

tuesday: low-carb cheeseburger casserole with cauliflower tots and salad (BAH! salad?!?!? Yeah I’m just messing with ya’ll cause that’s not gonna happen, my people won’t eat a salad for anything.)

wednesday: Thank you Lord for the kind Methodist Church folks as they feed my spirit and my belly.

thursday: skinny bruschetta chicken with zoodles and mac n’ cheese for Icky & Picky

friday: It’s homecoming at the high school with that comes the annual band Pork Chop dinner fundraiser so of course that’s what we’ll have for supper and probably fill in with yummies at the stadium as it’s also swim team night to work the concession stand. (I love my life, I love my life, I love my life (smile))

I also want to share a bonus recipe with ya’ll today, good old Pinterest and I conjured up a quick little soup for lunch and it was quite yummy. you can find the original inspiration recipe called Keto soup (the bomb).

I tinkered with it a little and come up with something pretty yummy, this is my take on the keto soup…

1 pound ground beef (browned)

1 can rotel tomatoes

1 small onion (diced)

1 small green bell pepper (diced)

1 large carton of beef broth

1/2 teaspoon basil

1/2 teaspoon garlic powder

salt & pepper to taste

1 block cream cheese

Brown meat and drain. Add in onion and peppers and saute until tender. Then add remaining ingredients and cook on low until cream cheese melts.

*When i sat down to eat I thought it needed little something so when in doubt add garlic salt and that’s just what I did! Not a bad little lunch at all for a dreary Monday.
